Setting Canon vs. Your Game

How do you guys handle setting canon in your games (assuming you're not running a home-brewed world)? For example, if you're running a Star Wars game in the time of Empire Strikes Back, do you avoid mentioning what Han, Luke and Leia are up to--or do you try to set things up so that the PCs run into them as they flee Hoth?

Does anyone have any experience with this sort of thing on the player's side? As a player, was it fun to interact with familiar characters, or irritating to have NPCs overshadowing your accomplishments?
